It's hard to go wrong with a gold ribbed hare's
ear (#14-18) on the Chattooga. For dry flies, something
big and bushy that will ride out the riffles like
a 12-14 elk hair caddis or Stimulator will probably
work in the evenings (they should also be easier
to spot in low light). Terrestrials like black ants in
sizes 14-18 can catch fish all day long as well.
