My neighbor shot a couple pheasants and a mess of quail.

Any favorite recipes for Pheasant. No grill handy this week

Soak in Buttermilk, it helps to break down the meat.
Stuff with jalapeno's
Wrap in Bacon
Bake/Grill

or

Soak in Buttermilk and then batter and fry

Either with a mix of good ole Southern Veggies with cornbread and glass of sweet tea will do it right.

Have used the same basic recipe as Troutsniper. I also add slivers of pineapple toothpicked to the meat and jalapeno wrapped in bacon.Italian dressing has also added to the flavor. Have always grilled and should be fine baked to poultry temp. NEVER over cook wild game! My group leaves for SD next week wish I was goin with them.

I was getting really excited about this thread until I realized it was for recipes for pheasant and not peasants.:(

We had some farm shot pheasant several years ago. It was a tad stringy, but very flavorful. Don't know if that was the bird itself or the spices, etc. used in prep. The folks we ate it with cooked it in the oven, much as one would a turkey, chicken, or other fowl. The hostess used liquified pineapple to baste it while it was roasting.

P.S. The #3 option made me do a double take...just sayin' !

And here i was thinking pheasants were only for feather donations.

I remember seeing a recipe on tv for quail and pheasant where he stuffed them with bread crumbs and a wild mushroom meddley, browned them in a pan with some shallots and butter. Once they are nice and brown, de glaze the skillet with some white wine and then baked them at 375 for 15-20 minutes .

I dony remember exactly what was in the stuffing but it sure did look tasty.

Pheasant Pot Pie is awesome.

Just cook it like you would with chicken.

That was what I was thinking, only several hours in a smoker with apple juice in the pan, maybe some apple wood chips in the fire.
